Fragile dreams of Nam Nam

'Fragile Dreams of Nam Nam’ was a performance by German artist and chef Johannes Gruber, held on the evening of May 3rd 2019. The event was part of ‘The Chef Residency’, a joint collaboration with Polar Permaculture.

In Johannes own words about his unique way of cooking: "I approach the Artica chef residency as I approach my kitchen: I bring some ingredients and I will look for stuff that is around and then I will cut it up and add some spice and in the end it hopefully is a tasty meal and will show what has happened."

Johannes finds the whole town's situation fascinating, being one of the most deserted places on earth and at the same time a hotspot for tourism. The fact that almost all the food has to be brought in and how this situation is reflected in the restaurants and the supermarket is another aspect of this. His work deals with the subjects of trust and dependence.
